Wine is divided into a few main categories. Red wine is made from dark grapes and ferments with the skins — this gives a deep colour and tannins. White wine is usually made from green or yellow grapes, but can actually be made from dark grapes if the skins are removed immediately. Rosé wine is created by leaving the skins in contact with the juice for a short time, a technique called maceration.

Sparkling wine has bubbles created by carbon dioxide, either via a second fermentation in the bottle or in a tank. Fortified wine, such as port and sherry, has added distilled spirit that raises the alcohol level. These five basic types cover almost all of the world's wine.
