Sauvignon Blanc is one of the wine world's most recognisable grapes. Its signature aroma is fresh and razor-sharp: freshly cut grass, passion fruit, gooseberry and occasionally the tom-cat note called 'boxwood'. Acidity is always high. The Loire Valley in France – especially Sancerre and Pouilly-Fumé – produces a mineral and herbal version. Marlborough in New Zealand delivers intense, explosive passion fruit and green herbs, making the grape world-famous. White Bordeaux often blends Sauvignon Blanc with Sémillon to add body. The wine should almost always be drunk young and fresh.
