Cabernet Sauvignon is the world's most widely planted red grape and is grown in all major wine countries. It is thick-skinned, late-ripening and produces powerful tannins and deep dark fruit: blackcurrant, cassis, blueberry and cedar notes. In classic Bordeaux it is blended with Merlot and Cabernet Franc to soften tannins and add complexity. In Napa Valley it produces more powerful, fruit-driven styles. With ageing, Cabernet Sauvignon develops complexity: tobacco, leather, cigar box and earthy notes emerge. High tannin and good acidity make it an excellent wine for cellaring.
